We paddled the French Broad River with French Broad River Expeditions (?). The river was very low (450CFS) but was still boatable and we had fun. Because of the level we were limited to the shorter run from Barnard to Stackhouse.
We camped at Rocky Bluff, a Forest Service campground up the road from Hot Springs. Info here : http://www.cs.unca.edu/nfsnc/recreation/RockyBluff.pdf
We had a great dinner at the Smoky Mountain Diner in Hot Springs.
